After a general introduction of the problematics with dark matter/dark energy in cosmology, I present investigations on the influence of dynamical quintessence field models on the formation of non-linear structures. In particular, I focus on the structure traced by the mass function. I will describe the top-hat spherical collapse in the presence of quintessence and the Press-Schechter scheme using it to obtain mass functions that describe the fraction of structures in the universe more massive than a given threshold. My contribution builds on previous studies by considering various potentials. The approach emphasises the physical insight into the key role played in the evolution by the equation of state.
